Pampanga: Giant Lantern Festival 2009

Masayang Pasko ampong Masaplalang Bayung Banua kekayu ngan! Like every year, I attended the annual Giant Lantern Festival of the City of San Fernando, Pampanga. And every year, the lanterns never fail to amaze me. Congratulations to Dolores, Telabastagan and San Jose for winning this year's competition!

North Philippines: Best pizza restaurants north of Metro Manila

Pizza is one of my personal favorites. Those who know me should know this fact very well. So I'm compiling a list of my favorite pizza places outside Metro Manila beginning with North Philippines.

Clark Freeport & Angeles City

C' Italian Dining (1210 Don Juico Avenue, Angeles City; +63 45 8924059) is known for the panizza. C' Italian Dining had already been serving these sumptuous pizzas rolled with arugula and alfalfa long before Yellow Cab came out with Dear Darla. And there's no way you can compare the taste! The C' panizza is the best!

The best sellers are Don Carmelo: spicy chorizo, anchovies, thyme and pecorino cheese; Kristina: bacon, ham, caramelized onion, sun dried tomatoes and mushrooms; and Saint Jacques: scallop flakes, shrimp, sun dried tomatoes and chili flakes.

Historic Camalig Restaurant (292 Sto. Rosario Street, Angeles City; +63 45 3225641 or 8881077) is the home of Armando's Pizza. My personal favorite is Doy's Kapampangan: longganisa, ebun buru (salted duck egg), onion & pickle relish. Their newest offering is Marco's 3-Way: sun-dried tomatoes & kesong puti plus a choice of either tuyo, tinapa or chicken adobo. Then there's Mexican Medley: shredded chicken breast (sauteed in hot pepper & pizza sauce), fresh tomato & spring onion. Another personal favorite is the classic Armando's Best: same toppings as All The Way, but with extra peperoni, double ground beef, double green pepper, double mushroom & extra Canadian bacon.

Didi's Pizza (MacArthur Highway, Balibago, Angeles City; + 63 45 8921184) serves a very Filipino-flavored pizza if you know what I mean. My personal favorite is the Combination: mushroom, salami, pepperoni, green pepper and onions.

Salvatore's Ristorante (300 Fields Avenue, Balibago, Angeles City; +63 45 8920484) serves good Italian pizza as well. Their best seller is Italian De Luxe: salami, pepperoni, Italian sausage, mushroom, green bell pepper, onion, black olives. While the toppings of Italian De Luxe are mixed together, another flavor called Combination has Vegetarian on one side, and Meat Lovers on the other half.

Sub-Delicious (298 Fields Avenue, Balibago, Angeles City; +63 45 8921999 or 8926667) serves pizzas as large as 28-inches. Flavors include Super Meaty: pepperoni, sausage and hamburger; and Pizza Italiano: pepperoni, ham, and salami.

Subic Bay Freeport & Olongapo City

Xtremely Expresso (1 Dewey Avenue cor. Sta. Rita Street, Subic Bay Freeport; +63 047 2523681) serves the 22-inch Big Ben: pepperoni, sausage, bacon, beef, garlic, onion, peppers, mushrooms, black olives and two kinds of cheese. Other pizzas include Spanish Sardines, Chicken Pesto, Chicken & Peanut, Corned Beef, and Spicy Salmon.

Sam's Pizza (44 Magsaysay Avenue, Olongapo City; +63 47 2223686) is an Olongapo institution. Their best-seller is Sam's Special: pepperoni, Philippine sausage, mushrooms, green pepper, onion, bacon, Italian sausage and cheese. I remember having Chicken Teriyaki before but they no longer have it.

La Union

Olives Restaurant (Thunderbird Resort, Poro Point, La Union; +63 72 8887777) serves delicious wood-fired pizzas. Their best seller is Four Cheese: goat, parmesan, feta and mozzarella cheese. My personal favorite is Quattro Stagioni: kalamata olives, artichoke hearts, parma ham, fresh mushrooms. Also try the Spicy Sausage, Roasted Peppers, Mozarrella & Oregano Pizza or the Smoked Salmon & Mushroom Pizza: smoked salmon, fresh mushrooms, tomato sprinkled with oregano and cheese.

Ilocos Norte

Herencia Cafe (MacArthur Street, Bgy. 14, Sangladan, Paoay; +63 77 6140214) serves the famous Pinakbet Pizza: sitaw (string beans), ampalaya (bitter gourd), okra, talong (egg plant), patani (lima beans), kamatis (tomaotes), sili (chili), and labanos (radish). They also serve Bagnet Pizza: bagnet, onions, and basil; and Dinuguan Pizza: dinuguan, crispy pork, and chili.

Saramsam Restaurant (N. Corpuz Building, Rizal cor. Hizon Streets, Barangay 7-A, Laoag City; +63 77 7715825) also serves Ilocano-inspired pizzas. Their specialty is Poque-Poque Pizza which is topped with poque-poque, an Ilocano eggplant dish: eggplant, tomatoes, onions ang egg. They also have the Dinardaraan Pizza: dinuguan topped with green chili peppers; Longaniza Pizza topped with the local Laoag longaniza; and the Carbonara Pizza topped with Currimao oysters.

Batanes

Casa Napoli (Abad Street, Brgy. Kaychanarianan, Basco; +63 927 7583370) serves pizzas with mozzarella cheese all the way in Batanes. Nothing really fancy about the pizzas but being in Basco, it's a novelty.

I'm sure there are more such as those in Baguio City, so please list them down by commenting below. I'll try to visit them when I can and add to this list.

Zambales & La Union: North Philippines road trip again

For the longest time, I haven't been able to update the blog because I've perennially been on the road. In fact, the last three days have been extremely exhausting because I had been driving up north, down to Manila, and back up north on a daily basis. Anyway, if it's any consolation, despite all the work involved in the trips, the opportunity to explore still keeps me going.

The last two days, we did our rounds of the Subic Freeport. While at Zoobic Safari, I didn't miss the opportunity to have my photo taken with a real tiger.

Of course, shoe therapy is a good reliever of stress thanks to the many discounted options available at the duty free shops (as the saying goes, 'There's a little Imelda in all of us'). I saw myself driving back to Manila to attend meetings and a guesting on ANC's Shop Talk (thanks to all those who watched Shop Talk the other day) and back to the north to get some sleep.

At least I finally got to breathe now. I'm savoring the only consolation after that unbelievably exhausting three-day road trip: a wonderful suite room with a great view at the Thunderbird Resort in Poro Point, San Fernando, La Union. Hopefully, things will normalize by the long weekend.

Pampanga: Another Good Friday in San Fernando, Pampanga

Good Friday and I'm usually in San Fernando, Pampanga. I spent my summers in San Fernando as a young kid and thus got exposed to the city's bloody rituals every Holy Week. Hundreds of flagellants or mamalaspas would pass in front of our house in the days leading to Good Friday.

There are four kinds of penitents or magdarame in Pampanga. In San Fernando, most of them are mamalaspas, whipping their bloodied backs while making their way around the city. At times, we'd see a mamusan krus or a penitent carrying a cross in the opposite street with his band of tormentors making such a ruckus, pushing and hitting the poor soul. Then there are the magsalibatbat or penitents who crawl on the street, bearing the burning heat of the scorching pavement and hot summer sun.

It was only recently that I've seen the kristos, penintents who are nailed to the cross, in Brgy. San Pedro Cutud (there are three crucifixion sites in San Fernando, the other two being Brgy. Sta. Lucia and Brgy. San Juan). The first time I visited Cutud, I told myself, it was going to be the last. It's dusty and unbearably hot at the burol. But I'm resigned to the fact that I'll be there often since friends always ask me to accompany them to the San Pedro Cutud Crucifixion Rites. So I found myself in Cutud again this year, this time with even more friends.

We got back at our house at 3 p.m. and had a really late lunch. The solemn Good Friday procession of the Sto. Entierro makes its way around the heritage district at about 6 p.m. This is something which tourists should see as well. After the procession, we had sumptuous dinners (let me stress it's with an "s") at the different heritage houses, hopping from one house to another. For some reason, Good Friday in San Fernando is one big fiesta when families gather and meet. And while abstinence is evident in the feasts, fasting is not! Even during Holy Week, Pampanga lives up to its name as our country's culinary capital.

Pampanga: Visita iglesia to Pampanga churches

When I was still City Tourism Officer of San Fernando, Pampanga, I lamented the fact that the beautiful churches of Pampanga were not given the attention they truly deserve during the Holy Thursday visita iglesia tours. Well, I can say that today that Pampanga is hot on the visita iglesia map!

On top of the list is the Betis Church in Guagua. A National Cultural Treasure, the church is called the Sistine Chapel of the Philippines because of its wall to ceiling mural paintings and its ornate wooden retablo.

You can start your visita iglesia in Lubao Church, the oldest church in Pampanga. From the San Fernando Exit of the NLEX, just drive westward to Lubao. After Lubao, drive eastward along the Jose Abad Santos Highway (Gapan-Olongapo Road) and look for the junction to Sta. Rita town on the left to visit the Sta. Rita Church. After there, you can drive to the Guagua Church, and then to Betis Church.

After Betis, drive along the old National Highway until you reach Bacolor Church. Once the biggest church in Pampanga, it is now half-buried under lahar. But that did not damped the pride of the town in their heritage since they dug up the wonderful retablos and restored them.

After Bacolor, continue your drive along the old National Highway until you reach San Fernando. You'll know you're in San Fernando when you see the chimneys of PASUDECO, the Pampanga Provincial Capitol, and the wonderful ancestral mansions along Consunji Street. Since Holy Thursday is also Araw ng Kagitingan, you might want to make a stopover at the San Fernando Train Station, an important Death March landmark.

Anyway, you'll be able to find the Metropolitan Cathedral of San Fernando really easily. The current interior of the Cathedral was designed by Architect Fernando Ocampo after the church burned down a second time in 1939.

Since you are already in San Fernando, you can have your lunch stop there and try out the great restaurants that serve some of the best Kapampangan fare.

From San Fernando, drive south along MacArthur Highway to the Minalin Church and Apalit Church. Then at the San Simon Interchange, cross above the NLEX eastward to get to the San Luis Church and further on, the Arayat Church. Along the way, you'll see the old facade of the Sta. Ana Church. However, its interior is heavily renovated.

If there's not enough time, you can go straight to Angeles Church north of San Fernando. From there, you could drive to Porac which has two old chapels worth visiting, the Pio Chapel and Hacienda Dolores Chapel. Pio is a bit more accessible. But it's quite a drive to Hacienda Dolores.

You can end your day with dinner in the Clark Freeport area which has a wonderful selection of international cuisine for all. Well, if your stomach is up to it, you can keep on eating in between churches since every town has its own specialty! A visita iglesia in Pampanga is definitely a feast for mind, body and soul!

Pampanga: Claude Tayag's Bale Dutung, Everybody's Cafe and more from Pampanga

We had a really great Pampanga food tour today. Breakfast was at Everybody's Cafe where we were served a genuine Kapampangan breakfast composed of tsokolate batirul, pandesal, tamales from Cabalatian and rebuelto. Panghimagas included sweetened saba with ice, and plantanilla (sweet egg crepes with latik filling) from the kitchens of Imang Salud. The group laughed in amusement when we said that breakfast was light.

We passed by the Bacolor and Betis churches before proceeding to Bale Dutung in Angeles City, Claude Tayag's famous residence. On the bus, we served the group five gallons of buko sherbet which you can buy in Brgy. San Jose in San Fernando in a wooden vat!

At Bale Dutung, aside from the usual appetizers which included crackers with buro, taba ng talangka and pesto dips, pako salad, lumpiang ubod and chicken inasal, we were served five ways of eating lechon!

The first way was eating the skin with liver sauce. And they did it fiesta style, allowing the guests to skin the lechon on their own. The second way was Claude's own pritchon. The lechon meat and skin was fried to a crisp and served with soft tortillas and a choice of tomato, onion, basil, kinchay, kimchi and oriental sauce for the filling. It was really good!

Before moving on to number three, we were served begukan (made of pig's ears) and eggplant boats. For number three, it was sinigang na lechon. We were told the lechon bones were thrown into the broth to give it more flavor. They then brought out grilled lechon ribs marinated in inasal sauce. That was really good! The last dish was inasadong lechon pata!

To end our five hour lunch at Claude's, we were served halo-halo with the different Kapampangan ingredients which includes pastillas, leche flan, mais, saging and beans. The day did not end without our pasalubong for the group which included Imang Salud's ensaimadas and the inverted brazo de mercedes bites from Aurely's. Everyone told us to stop feeding them!

Pampanga: Crucifixion rites held in San Pedro Cutud every Good Friday

Just like last year, I found myself in San Pedro Cutud in San Fernando, Pampanga today to witness the Via Crucis, a Kapampangan passion play which has been the heart of the annual crucifixions here in the city, which is more popularly know as the San Pedro Cutud Lenten Rites.

As the crucifixions are highlighted, many fail to recognize that they are part of an old cultural tradition of the barangay, a passion play written in the vernacular, which has been passed on from generation to generation. In fact, it's already in the third generation of the Navarro clan.

I was pleasantly surprised that vehicles are now allowed to enter San Pedro Cutud. And it was even more pleasant when I saw that there was ample parking at the site. In previous years, it was a long 2 kilometer walk from the gate of the barangay under the heat of the scorching summer sun.

While waiting for the Via Crucis to arrive, flagellants would climb the hill and pay homage at the foot of the cross ending their annual Lenten sacrifice or panata. Most of the time, silence envelopes the crowd as the bloodied penitents make their way up, giving them time to be "alone" with God. But while most encounters are solemn, there are some under the influence of alcohol (it is said that they down a bottle of beer to speed up the circulation of blood), and a rare few who make a scene up the hill thus eliciting laughter from the crowd to the dismay of local officials who have them escorted down immediately.

This year, the Via Crucis started late. The play arrived close to 2 p.m. And by that time, we had been under the sun for over three hours! It was good though that they were able to keep non-cast members off the hill this time around. The scores of barangay tanod and alalay (assistants) who usually joined the cast up the hill were asked to get down. While some of the stubborn foreign media who would usually force their way up, though they were able to slip into the restricted area, were kept at the middle level, away from the top of the hill.

Before I left, I was told that there were fourteen penitents who were going to be nailed to the cross this year, including two women. But a news article reported nineteen! Anyway, I left at about 3 p.m. for my annual visit to relatives. Since Good Friday is one of those events when San Fernando old families gather (usually to prepare their carroza for the elegant Good Friday procession in the evening), kitchens are busy preparing the best Lenten dishes. We wouldn't want to miss that!

This is a must read for tourists who visit areas with penitents. It's simple conduct we must remember. As Robbie Tantingco writes, "What our penitents do is a very personal and sacred act, and we should protect them from media who sensationalize, and tourists who trivialize, this act... Tourists should be treated as, well, tourists, to be accorded the usual courtesy and hospitality and given the necessary amenities. But tourists should not be allowed to distract or interact with the penitents; they should merely watch and observe, with as much distance from, and reverence for, the penitents as possible."

Pampanga: Ultimate show-off in Pampanga and Giant Lantern Festival 2007

There were a lot of surprises we did not mention in our announcements. Aside from lunch at Claude Tayag's Bale Dutung, we gave each participant a bayong with our favorite Kapampangan goodies such as Imang Salud's ensaymadas, turrones de casoy from Santa Rita, Aurely's Special which is an inverted brazo de mercedes, Junjun's barbecue and puto pao from Nathaniel's. On the bus, we also served five gallons of the legendary buko sherbet of Brgy. San Jose in San Fernando!

I guess the biggest surprise for the group was that Among Ed Panlilio joined us for lunch at Claude's! The Giant Lantern Festival was as spectacular as always. And it was a great thing they returned the marching band tradition. Watch out for our upcoming tours. We don't plan on repeating tours so the next one will definitely be different. It was all smiles for everyone after 16 hours in flamboyant Pampanga.

Pampanga: Another Pampanga adventure

I attended another event in Pampanga today. Hausland launched Fiesta Homes, their low-cost housing company. The guest of honor was none other than Vice-President Noli de Castro. Of course, Among Ed was there too.

After the event, I took our brod Lindolf around Pampanga. We drove around the San Fernando Heritage District and dropped by the half-buried Bacolor Church before returning to Angeles City via the Megadike Road. We had to rush since we had to catch an event in Manila in the evening that's why we missed Betis.

Dinner was at Red Sea in Fields Avenue with mint-flavored shisha to match! There are just so many choices in Fields Avenue, it would take you days to try out all the good restaurants.

La Union: Surf's up in San Juan, La Union

I just came back from a great weekend in La Union. I trooped to the San Juan Surf Resort with my brods and other surfer wannabes on Travel Factor's Surfvivor Surfing Tour. We left McDonald's El Pueblo at 12:30 a.m. on three vans loaded with surfing beginners. It was a coincidence that my China-ASEAN batchmate Carly and her friends were also going.

I was so tired and sleepy, I slept all the way. The only thing I remember was the 4 a.m. breakfast stopover in Jollibee Urdaneta. We arrived in San Juan a little before 7 a.m. As soon as we got the keys to our room, we slept.

Tikoy, the organizer, woke us up at about 9:30 a.m. to ask who wanted to join the first group. It may seem short, but the one hour lessons are exhausting. Some of us joined the first group while I took photos. I went for the second group later in the afternoon at 3 p.m.

Training us was Luke Landrigan and his pool of locals who gave us one-on-one lessons. I was elated since I managed to stand up on the board this time around! We decided we wanted more so we scheduled another hour the next morning.

Dinner was at Midway Grill in San Fernando, LU. It was value for money! Burgers and fries were priced at PHP39, while bottomless iced tea at PHP29. For dessert, I got the oreo brownie split for P120. Yummy! If you're on your way to Ilocos, this is a great stopover for lunch of snacks.

Later in the evening, we had drinks in the bar area of the resort with our friends. We got to sleep at 3 a.m. which is a wonder how we managed to wake up in time for the optional morning surfing lessons. After check out, we had lunch in Midway Grill again. Pampanga: Watch the frogs hop at Pyestang Tugak

The City of San Fernando, Pampanga will end the Pyestang Tugak: 5th Annual San Fernando Frog Festival later today. This event is extra special to me since I organized the first one way back in 2003. Frogs are a unique part of Pampanga culinary traditions. And by organizing the festival, the city is ensuring that these traditions are preserved and promoted.

There is a traditional way of catching frogs called paduasan. In the early days, when the rains came, while the elders where busy planting rice, kids would catch frogs. This game eventually evolved into a specialized technique and skill. Catchers use a bamboo rod called the paduas. And at the end of the string, they attach a type of worm called bulateng tudtud or sleeping worm. Once the frog bites, its tongue get entangled with the worm, and the catcher is able to hurl it up in the air and lets it fall into a net called panyapu.

It was a common sight to see people lined-up on top of the pilapil or rice paddies with a paduas in one hand and panyapu in the other, patiently waiting for the frogs to bite. The trick was to move the paduas in a slow horizontal direction, as quiet as possible so as not to agitate the frogs, mimicking the movements of insects hoping on the water surface.

Of course, the festival features frog cuisine in the lutung tugak competition which is scheduled today. The most popular traditional dish is undisputedly betute (which is Kapampangan for tadpole) or deep-fried frog stuffed with minced pork or even frog meat. During the festival, HRM students battle it out in preparing new frog recipes in hotel worthy presentations; while ordinary citizens come up with the best tasting traditional dishes.

We also added some fun games for the kids with the papyalung tugak which includes frog races, longest jump and dress-up-your frog competition among many others. They even have frog mascots nowadays.

This is great news for the City of Manila! The elegant Army and Navy Club National Landmark which Atienza turned into a bodega is now the Museo ng Maynila again. Congratulations as well to the revived Manila Historical and Heritage Commission!

Save the Mt. Guiting-Guiting ecosystem!

Sibuyan Island in the province of Romblon stands out. It's called the Galapagos of Asia because of its high concentration of endemic species. One third of the 46,000-hectare island is a protected area. It's also home to heavily-forested Mt. Guiting-Guiting which has as much as 75 percent of its forest cover intact, and beautiful and clean rivers. Guess what? Mining is in! Now isn't that stupid? Before leaving the DENR, Sec. Angelo Reyes approved five special cutting permits to clear forest land for mining activity despite the strong opposition of the island's residents. That's an estimated 59,000 trees to be cut! All for nickel, the country is giving up a more precious treasure, the natural heritage of Sibuyan Island.
